- 1 cup cottage cheese (full-fat or low-fat)
- 2 large eggs
- ½ cup oat flour (or almond flour for low-carb)
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- Optional: ½ teaspoon garlic powder or Italian seasoning
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Blend cottage cheese and eggs in a blender until smooth.
- Pour into a bowl and stir in oat flour, baking powder, salt, and any optional seasonings.
- Scoop batter onto parchment and spread into a thin oval or rectangle (about ¼-inch thick).
- Bake for 20–25 minutes or until golden and set. For a crispier edge, broil for 2 minutes at the end.
- Cool slightly, then slice or use whole as a wrap or pizza base.
Notes
Store in the fridge for up to 4 days or freeze for up to 2 months. Toast or reheat in a skillet for best texture.
