- 3 cups corn kernels (fresh, canned, or frozen & thawed)
- 1/2 red bell pepper, diced
- 1/2 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro or parsley, chopped
- 1/3 cup mayonnaise or Greek yogurt
- 1 tablespoon lime juice or vinegar
- Salt and black pepper, to taste
- Optional: 1/2 teaspoon chili powder or paprika for a kick
Instructions
- Prepare Ingredients: If using fresh corn, cook and cool before cutting off the kernels. Otherwise, drain canned corn or thaw frozen corn.
- Mix Dressing: In a small bowl, whisk together mayo (or yogurt), lime juice, salt, pepper, and optional spices.
- Combine Salad: In a large bowl, combine corn, bell pepper, cucumber, red onion, and herbs. Pour dressing over and toss well to coat.
- Chill and Serve: Refrigerate for 15–30 minutes to allow flavors to meld before serving.
Notes
Use fresh grilled corn for added smoky flavor. For a lighter version, swap mayo for plain Greek yogurt. This salad pairs well with grilled meats, tacos, or as a BBQ side.
