Instructions

  1. Prepare Ingredients: If using fresh corn, cook and cool before cutting off the kernels. Otherwise, drain canned corn or thaw frozen corn.
  2. Mix Dressing: In a small bowl, whisk together mayo (or yogurt), lime juice, salt, pepper, and optional spices.
  3. Combine Salad: In a large bowl, combine corn, bell pepper, cucumber, red onion, and herbs. Pour dressing over and toss well to coat.
