  • 1 onion, diced
  • 23 garlic cloves, minced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper, to taste
  • Optional toppings: shredded cheddar, sour cream, chopped green onions

Instructions

  1. In a large pot, brown the beef over medium-high heat. Drain excess fat.
  2. Add onion, garlic, and bell peppers. Sauté 4–5 minutes until softened.
  3. Stir in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Cook 1–2 minutes to release aromas.
  4. Add diced tomatoes and beans. Bring to a boil, then reduce heat and simmer for 25–30 minutes.
  5. Adjust seasoning to taste. Serve hot with optional toppings.
