- 1 lb (450g) ground beef or chuck, diced
- 1 onion, diced
- 2–3 garlic cloves, minced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (optional)
- Salt and pepper, to taste
- Optional toppings: shredded cheddar, sour cream, chopped green onions
Instructions
- In a large pot, brown the beef over medium-high heat. Drain excess fat.
- Add onion, garlic, and bell peppers. Sauté 4–5 minutes until softened.
- Stir in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Cook 1–2 minutes to release aromas.
- Add diced tomatoes and beans. Bring to a boil, then reduce heat and simmer for 25–30 minutes.
- Adjust seasoning to taste. Serve hot with optional toppings.
Notes
For extra depth, add a splash of beer or simmer longer. Perfect for a restaurant-style chili experience at home.
