- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup pumpkin puree
- 1 large egg yolk
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 1/4 tsp salt
- Frosting:
- 4 oz cream cheese, softened
- 2 tbsp butter, softened
- 1/2 tsp vanilla extract
- 1 1/2 cups powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream butter and both sugars until light and fluffy.
- Mix in pumpkin puree, egg yolk, and vanilla until smooth.
- In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, pumpkin pie spice, and salt.
- Gradually add dry ingredients to wet ingredients and mix until a soft dough forms.
- Scoop dough into large balls (about 1/4 cup each), slightly flatten, and place on baking sheet.
- Bake for 12–14 minutes or until edges are set. Let cool completely.
- For the frosting, beat cream cheese, butter, and vanilla until smooth. Add powdered sugar and beat until fluffy.
- Frost cooled cookies generously and chill slightly for a Crumbl-like texture.
Notes
For extra bakery-style presentation, dust cookies with cinnamon sugar or pipe the frosting in a swirl pattern. Store in the fridge for a firmer texture.
