- 1/2 cup unsalted butter, softened
- 1/2 cup cookie butter (Biscoff spread)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- Optional: 1/2 tsp cinnamon or nutmeg for extra spice
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together butter, cookie butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the egg and vanilla extract until smooth.
- In a separate bowl, whisk together flour, baking soda, salt, and optional spices.
- Gradually add dry ingredients to wet ingredients and mix until a soft dough forms.
- Roll dough into 1–2 tbsp balls and place on prepared baking sheets, spacing about 2 inches apart.
- Flatten slightly with the back of a fork or your hand.
- Bake 10–12 minutes until edges are set but centers are soft.
- Cool on baking sheets for 5 minutes before transferring to a wire rack.
Notes
For chewier cookies, slightly underbake. Cookie butter variations like crunchy or smooth will slightly change texture. Store in an airtight container for up to 5 days.
