- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon instant coffee or espresso powder
- 1 tablespoon hot water (to dissolve coffee)
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Optional: 1/2 cup chocolate chips or white chocolate chips
Instructions
- Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the egg and vanilla extract.
- In a small bowl, dissolve the instant coffee or espresso powder in the hot water, then add it to the wet mixture.
- In another bowl, whisk together the flour, baking powder, and salt.
- Add the dry ingredients to the wet ingredients and mix until combined.
- Fold in chocolate chips if using.
- Scoop dough onto the baking sheet.
- Bake for 10–12 minutes, or until set around the edges but still soft in the center.
- Cool on a wire rack and enjoy.
Notes
For stronger coffee flavor, add an extra teaspoon of espresso powder. Cookies stay soft for 4–5 days in an airtight container.
