Description

These Coffee Cookies are soft, chewy, and packed with bold coffee flavor. Easy to make, no chilling required, and perfect for coffee lovers looking for a delicious pick-me-up treat.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant coffee or espresso powder
  • 1 tablespoon hot water (to dissolve coffee)
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chocolate chips or white chocolate chips

Instructions

  1. Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the egg and vanilla extract.
  4. In a small bowl, dissolve the instant coffee or espresso powder in the hot water, then add it to the wet mixture.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Add the dry ingredients to the wet ingredients and mix until combined.
  7. Fold in chocolate chips if using.
  8. Scoop dough onto the baking sheet.
  9. Bake for 10–12 minutes, or until set around the edges but still soft in the center.
  10. Cool on a wire rack and enjoy.

Notes

For stronger coffee flavor, add an extra teaspoon of espresso powder. Cookies stay soft for 4–5 days in an airtight container.
