- 1½ cups water
- ¼ cup maple syrup or sugar (adjust to taste)
- Pinch of salt
- 1 teaspoon lime zest
- 1 tablespoon fresh lime juice
- Optional toppings: toasted coconut flakes, sliced mango, extra lime zest
Instructions
- Simmer Rice: In a medium saucepan, combine rice, coconut milk, water, sweetener, and salt. Bring to a boil, then reduce heat to low.
- Cook Until Creamy: Simmer uncovered, stirring often, for 25–30 minutes or until rice is tender and mixture is thick and creamy.
- Finish with Lime: Stir in lime zest and lime juice. Taste and adjust sweetness or acidity if needed.
- Serve: Enjoy warm or chilled. Top with toasted coconut or fruit for extra flavor.
Notes
For extra richness, replace water with more coconut milk. If pudding thickens too much, stir in a splash of milk before serving. Keeps well in the fridge for 3–4 days.
