Coconut Lime Popsicles are refreshing, creamy, and citrusy frozen treats perfect for hot summer days. Made with just a few wholesome ingredients, they offer a tropical escape in every bite — no ice cream maker required!

- 1 (13.5 oz) can full-fat coconut milk
- 2 tablespoons honey or maple syrup (adjust to taste)
- Zest of 1 lime
- 3 tablespoons fresh lime juice
- Pinch of salt
Instructions
- Blend: In a blender, combine coconut milk, honey, lime zest, lime juice, and a pinch of salt. Blend until smooth and creamy.
- Pour: Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert Sticks: Add popsicle sticks and tap the molds lightly to remove any air bubbles.
- Freeze: Freeze for at least 4–6 hours, or until solid.
- Unmold: Run warm water over the outside of the molds for a few seconds to release the popsicles.
Notes
For extra texture, stir in shredded coconut before freezing. You can also swirl in a bit of Greek yogurt for a creamier version. Keep frozen and enjoy within 2 weeks.
