Ingredients

  • 2 tablespoons honey or maple syrup (adjust to taste)
  • Zest of 1 lime
  • 3 tablespoons fresh lime juice
  • Pinch of salt

Instructions

  1. Blend: In a blender, combine coconut milk, honey, lime zest, lime juice, and a pinch of salt. Blend until smooth and creamy.
  2. Pour: Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  3. Insert Sticks: Add popsicle sticks and tap the molds lightly to remove any air bubbles.
  4. Freeze: Freeze for at least 4–6 hours, or until solid.
  5. Unmold: Run warm water over the outside of the molds for a few seconds to release the popsicles.

Notes

For extra texture, stir in shredded coconut before freezing. You can also swirl in a bit of Greek yogurt for a creamier version. Keep frozen and enjoy within 2 weeks.
