  • 1/2 cup fresh lemon juice
  • 12 tbsp honey or simple syrup
  • 1/4 tsp culinary lavender (or 1 tsp lavender syrup)
  • 1/2 cup cold water or sparkling water
  • Ice cubes
  • Lemon slices & lavender sprig for garnish

  1. Infuse lavender: Add lavender to 2 tbsp warm water and let steep 3–5 minutes, then strain.
  2. In a glass or shaker, combine lemon juice and honey (or syrup) and stir until dissolved.
  3. Add coconut water and the lavender infusion.
  4. Fill glass with ice and pour mixture over it.
  5. Top with still or sparkling water and stir gently.
  6. Garnish with lemon slices and a lavender sprig.
  7. Serve immediately chilled.

Notes

Adjust lavender carefully — too much can taste bitter or soapy. For a creamier version, add a splash of coconut milk. Chill all ingredients beforehand for the most refreshing flavor.
