- 1 cup creamy peanut butter
- 3/4 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 1 egg yolk
- 2 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- Extra sugar for rolling (optional)

Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the butter, peanut butter, brown sugar, and granulated sugar until light and fluffy, about 2–3 minutes.
- Mix in the egg, egg yolk, and vanilla until smooth.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients and mix until a soft dough forms.
- Roll dough into 1–2 tbsp balls. If desired, roll each ball in granulated sugar.
- Place on baking sheet and gently press with a fork to create criss-cross pattern.
- Bake 8–10 minutes, until edges are set but centers remain soft and slightly puffy.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Avoid overbaking for the softest cookies. Extra egg yolk ensures chewiness. Add chocolate chips or chopped peanuts for extra flavor and texture.
