- Mash bananas in a large bowl until smooth.
- Stir in melted butter, sugar, eggs, and vanilla until combined.
- Add baking soda, salt, and cinnamon; mix gently.
- Fold in flour just until no dry streaks remain.
- Fold in optional mix-ins if desired.
- Pour batter into prepared loaf pan and smooth the top.
- Bake 55–65 minutes, or until a toothpick inserted comes out clean.
- Cool 10 minutes in pan, then transfer to a wire rack.
Notes
Use very ripe bananas for best flavor and moisture. Cover loosely with foil if the top browns too quickly. Banana bread tastes even better the next day.
