  2. Mash bananas in a large bowl until smooth.

  5. Fold in flour just until no dry streaks remain.
  6. Fold in optional mix-ins if desired.
  7. Pour batter into prepared loaf pan and smooth the top.
  8. Bake 55–65 minutes, or until a toothpick inserted comes out clean.
  9. Cool 10 minutes in pan, then transfer to a wire rack.

Notes

Use very ripe bananas for best flavor and moisture. Cover loosely with foil if the top browns too quickly. Banana bread tastes even better the next day.
