- 1 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 carrots, sliced
- 2 celery stalks, sliced
- 6 cups chicken broth
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 2 cups egg noodles or pasta of choice
- Salt, to taste
- Optional garnish: fresh parsley, green onions

- Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger; sauté 3–4 minutes until fragrant and softened.
- Add chicken and cook 5–6 minutes until lightly browned.
- Add carrots, celery, chicken broth, thyme, and black pepper. Bring to a boil, then reduce heat and simmer 15 minutes until vegetables are tender.
- Add noodles and cook according to package directions until tender.
- Season with salt to taste. Serve hot, garnished with parsley or green onions if desired.
Notes
For a richer flavor, simmer the chicken in the broth with the vegetables before adding the noodles. Leftovers taste even better the next day.
