- 1 tsp chili powder
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 2 cups cooked shredded chicken
- 1 cup corn kernels (fresh or frozen)
- 1 can (15 oz) black beans, drained and rinsed
- Salt and pepper, to taste
- 1/2 cup chopped fresh cilantro
- Juice of 1 lime
- Tortilla strips, shredded cheese, avocado, and sour cream for topping

- In a large pot, heat olive oil over medium heat. Add onion, garlic, red bell pepper, and jalapeño; sauté 5 minutes until softened.
- Stir in cumin and chili powder; cook 1 minute until fragrant.
- Add chicken broth, diced tomatoes, shredded chicken, corn, and black beans. Bring to a boil, then reduce heat and simmer 15–20 minutes.
- Season with salt and pepper. Stir in lime juice and cilantro before serving.
- Ladle soup into bowls and top with tortilla strips, shredded cheese, avocado, and sour cream as desired.
Notes
For extra depth, simmer the soup for 30–40 minutes. You can also roast the vegetables beforehand for more flavor.
