- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 jalapeño, seeded and diced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp oregano
- 1 can (14 oz) diced tomatoes
- 4 cups chicken broth
- 2 cups cooked shredded chicken
- 1 cup corn kernels
- 1 can (14 oz) black beans, drained and rinsed
- Salt and pepper to taste
- Juice of 1 lime
- Tortilla strips or crushed tortilla chips
- Shredded cheese, avocado, cilantro, sour cream (optional toppings)

- Sauté aromatics: Heat olive oil in a large pot over medium heat. Cook onion 3–4 minutes until soft.
- Add garlic and jalapeño and cook 1 minute.
- Stir in chili powder, cumin, paprika, and oregano; cook 30 seconds.
- Simmer: Add diced tomatoes and chicken broth. Bring to a simmer.
- Add shredded chicken, corn, and black beans.
- Simmer uncovered 15–20 minutes.
- Season with salt, pepper, and lime juice.
- Serve: Ladle into bowls and top with tortilla strips, cheese, avocado, cilantro, and sour cream.
Notes
Rotisserie chicken works great for convenience. For a thicker soup, blend 1 cup of the soup and return it to the pot. Add extra jalapeño or hot sauce for more heat.
