  • 12 oz pasta (rotini, penne, or egg noodles)
  • 2 cups cooked chicken, shredded or diced
  • 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • Salt & pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large skillet or pot, melt butter over medium heat.
  3. Whisk in flour to create a roux and cook for 1 minute.
  4. Slowly pour in the chicken broth while whisking until smooth.
  5. Stir in heavy cream, garlic powder, onion powder, thyme, salt, and pepper. Simmer until thickened.
  6. Add the cooked chicken and frozen mixed vegetables. Cook for 5–7 minutes until vegetables are tender.
  7. Stir in the cooked pasta and combine until evenly coated.
  8. Adjust seasoning to taste and simmer 1–2 more minutes.
  9. Serve warm with fresh parsley on top!
