- 12 oz pasta (rotini, penne, or egg noodles)
- 2 cups cooked chicken, shredded or diced
- 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream or half-and-half
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried thyme
- Salt & pepper, to taste
- Fresh parsley, for garnish
Instructions
- Cook pasta according to package directions. Drain and set aside.
- In a large skillet or pot, melt butter over medium heat.
- Whisk in flour to create a roux and cook for 1 minute.
- Slowly pour in the chicken broth while whisking until smooth.
- Stir in heavy cream, garlic powder, onion powder, thyme, salt, and pepper. Simmer until thickened.
- Add the cooked chicken and frozen mixed vegetables. Cook for 5β7 minutes until vegetables are tender.
- Stir in the cooked pasta and combine until evenly coated.
- Adjust seasoning to taste and simmer 1β2 more minutes.
- Serve warm with fresh parsley on top!
