- 1 (30 oz) bag frozen hash browns, thawed
- 8 large eggs
- 1 1/2 cups milk
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup melted butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder (optional)
- 1/2 tsp onion powder (optional)
- 2 tbsp chopped green onions or parsley (optional)
- Butter or cooking spray for greasing

- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Spread hash browns evenly in the prepared baking dish.
- In a large bowl, whisk together eggs, milk, sour cream, melted butter, salt, pepper, garlic powder, and onion powder.
- Stir in shredded cheddar cheese.
- Pour the egg mixture evenly over the hash browns and gently spread.
- Cover with foil and bake for 40 minutes.
- Remove foil and bake an additional 15–20 minutes until eggs are set and top is lightly golden.
- Let rest 5 minutes. Garnish with green onions or parsley before serving.
Notes
This classic casserole can be made ahead and refrigerated overnight. Add cooked sausage or bacon if desired, or keep it simple and cheesy.
