- 2 Β½ cups all-purpose flour
- 1 teaspoon salt
- 1 cup cold unsalted butter, cubed
- 6β8 tablespoons ice water
- 6 cups peeled, sliced apples (Granny Smith, Honeycrisp, or mix)
- ΒΎ cup granulated sugar
- ΒΌ cup brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- ΒΌ teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon butter, cut into small cubes (for topping)
- 1 egg (for egg wash)
- 1 tablespoon milk (for egg wash)
Instructions
- In a large bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs. Add ice water gradually and mix just until dough forms. Divide in half, wrap, and refrigerate for 30 minutes.
- Preheat oven to 425Β°F (220Β°C). In another bowl, toss apples with sugars, flour, cinnamon, nutmeg, and lemon juice.
- Roll out one dough half and fit into a 9-inch pie dish. Fill with apple mixture and dot with butter.
- Roll out second dough half, place over filling, trim, and crimp edges. Cut slits on top to vent.
- Brush top with egg wash (beaten egg + milk). Bake for 45β50 minutes until golden brown and bubbly.
- Cool for at least 2 hours before slicing for the perfect set filling.
