  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 2 tbsp granulated sugar (for topping)

  2. In a medium bowl, mix melted butter and brown sugar until smooth.
  3. Add egg and vanilla extract and stir until combined.
  4. In another bowl, whisk together flour, baking powder, salt, and cinnamon.
  5. Gradually fold dry ingredients into the wet mixture until just combined.
  6. Pour batter into prepared pan and smooth the top.
  7. Sprinkle granulated sugar mixed with a pinch of cinnamon evenly over the top.
  8. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool completely before cutting into squares.

Notes

For extra flavor, swirl in a bit of caramel or sprinkle with chopped nuts before baking. Store in an airtight container at room temperature for up to 3 days.
