- Shortbread Base:
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- Cinnamon Filling:
- 1/3 cup brown sugar
- 1 tablespoon cinnamon
- 2 tablespoons melted butter
- Vanilla Glaze:
- 1 cup powdered sugar
- 1–2 tablespoons milk or cream
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (180°C). Line an 8×8-inch pan with parchment paper.
- Cream the softened butter and granulated sugar until light and fluffy.
- Add vanilla and salt, then mix in the flour until a soft dough forms.
- Press the shortbread dough evenly into the prepared baking pan.
- In a small bowl, mix the brown sugar, cinnamon, and melted butter.
- Spread the cinnamon mixture over the shortbread base.
- Use a knife to swirl the cinnamon filling slightly into the dough.
- Bake for 22–26 minutes, or until lightly golden at the edges.
- Cool completely in the pan.
- Make the Glaze: Whisk powdered sugar, vanilla, and milk until smooth.
- Drizzle glaze over cooled bars, slice, and serve.
Notes
For extra cinnamon roll flavor, add a pinch of nutmeg to the filling. Bars store well in an airtight container for up to 5 days. For a thicker glaze, add more powdered sugar; for a thinner drizzle, add more milk.
