Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tbsp melted butter
  • 1 tsp vanilla extract
  • For the cinnamon swirl: 1/4 cup brown sugar + 1 tsp cinnamon + 1 tbsp melted butter
  • For the glaze: 1/2 cup powdered sugar + 1–2 tsp milk

Instructions

  1. In a bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, combine milk, egg, melted butter, and vanilla extract.
  3. Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
  4. Mix together cinnamon swirl ingredients in a small bowl.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease.
  6. Pour 1/4 cup batter for each pancake. Using a spoon, swirl some cinnamon mixture into each pancake.
  7. Cook until bubbles form on the surface, then flip and cook until golden brown.
  8. Mix powdered sugar and milk for glaze, then drizzle over warm pancakes. Serve immediately.

Notes

For a fun twist, add chopped nuts or raisins to the swirl mixture. These pancakes can be kept warm in a low oven for a few minutes before serving.
