- 1 1/2 cups all-purpose flour
- 2 tbsp sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 1/4 cups milk
- 1 large egg
- 3 tbsp melted butter
- 1 tsp vanilla extract
- For the cinnamon swirl: 1/4 cup brown sugar + 1 tsp cinnamon + 1 tbsp melted butter
- For the glaze: 1/2 cup powdered sugar + 1–2 tsp milk
Instructions
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, combine milk, egg, melted butter, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
- Mix together cinnamon swirl ingredients in a small bowl.
- Heat a non-stick skillet or griddle over medium heat and lightly grease.
- Pour 1/4 cup batter for each pancake. Using a spoon, swirl some cinnamon mixture into each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Mix powdered sugar and milk for glaze, then drizzle over warm pancakes. Serve immediately.
Notes
For a fun twist, add chopped nuts or raisins to the swirl mixture. These pancakes can be kept warm in a low oven for a few minutes before serving.
