- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 2 cloves garlic, minced
- ¼ cup chopped fresh cilantro
- ½ teaspoon ground cumin
- Salt and pepper, to taste
- 8 small corn or flour tortillas, warmed
- For serving:
- 2 cups shredded cabbage or slaw mix
- ¼ cup sour cream or Greek yogurt
- 1 tablespoon lime juice
- Optional: sliced avocado, pickled onions, hot sauce
Instructions
- Marinate Shrimp: In a bowl, combine olive oil, lime juice and zest, garlic, cilantro, cumin, salt, and pepper. Add shrimp and toss to coat. Marinate for 15–20 minutes.
- Make Sauce: In a small bowl, mix sour cream with lime juice and a pinch of salt. Set aside.
- Cook Shrimp: Heat a skillet over medium-high heat. Cook shrimp for 1–2 minutes per side until pink and opaque. Remove from heat.
- Assemble Tacos: Add shrimp to warm tortillas, top with slaw, drizzle with lime sauce, and add any extra toppings you like.
Notes
Use Greek yogurt for a lighter sauce, or spice things up with chipotle or jalapeño. These also work great with grilled shrimp or on lettuce wraps for a low-carb version.
