  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 cup red wine (dry)
  • 2 cups beef broth
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat oven to 375Β°F (190Β°C). Pat beef roast dry and season generously with salt, pepper, garlic, rosemary, and thyme.
  2. In a large skillet, heat olive oil over medium-high heat. Sear roast on all sides until browned.
  3. Transfer roast to a roasting pan and roast in the preheated oven for 1–1.5 hours, or until internal temperature reaches desired doneness (medium-rare: 135Β°F / 57Β°C).
  4. Remove roast and let rest for 15–20 minutes before slicing.
  5. For the red wine gravy, pour drippings from the roasting pan into a saucepan. Add red wine and beef broth, bring to a simmer.
  6. Melt butter in a small bowl, mix with flour to form a paste (beurre maniΓ©). Whisk into gravy until thickened and smooth.
  7. Season gravy with salt and pepper to taste. Serve sliced roast beef with red wine gravy and garnish with parsley if desired.
