- 3β4 lb beef roast (ribeye, sirloin, or top round)
- 2 tbsp olive oil
- Salt and freshly ground black pepper, to taste
- 4 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 cup red wine (dry)
- 2 cups beef broth
- 2 tbsp butter
- 2 tbsp all-purpose flour
- Optional: fresh parsley for garnish
Instructions
- Preheat oven to 375Β°F (190Β°C). Pat beef roast dry and season generously with salt, pepper, garlic, rosemary, and thyme.
- In a large skillet, heat olive oil over medium-high heat. Sear roast on all sides until browned.
- Transfer roast to a roasting pan and roast in the preheated oven for 1β1.5 hours, or until internal temperature reaches desired doneness (medium-rare: 135Β°F / 57Β°C).
- Remove roast and let rest for 15β20 minutes before slicing.
- For the red wine gravy, pour drippings from the roasting pan into a saucepan. Add red wine and beef broth, bring to a simmer.
- Melt butter in a small bowl, mix with flour to form a paste (beurre maniΓ©). Whisk into gravy until thickened and smooth.
- Season gravy with salt and pepper to taste. Serve sliced roast beef with red wine gravy and garnish with parsley if desired.
