Description

This Christmas Breakfast Casserole is the perfect festive morning meal—savory, cheesy, hearty, and easy to prep ahead! Loaded with sausage, eggs, peppers, and gooey cheese, it’s a comforting holiday tradition your whole family will love.

Ingredients

Scale
  • 1 lb breakfast sausage
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 8 large eggs
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 6 cups cubed French bread or brioche
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Cooking spray or butter for greasing

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook the sausage in a skillet over medium heat until browned. Drain excess grease.
  3. Add diced peppers and onion to the skillet and sauté until softened, about 5 minutes.
  4. Spread cubed bread evenly into the baking dish.
  5. Top with cooked sausage and vegetables.
  6. Sprinkle cheddar and mozzarella cheese over the top.
  7. In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
  8. Pour the egg mixture evenly over the casserole. Press gently to help everything soak.
  9. Bake for 40–45 minutes, or until eggs are set and the top is golden.
  10. Let cool for 10 minutes before slicing. Serve warm.

Notes

Make this casserole the night before and refrigerate, then bake in the morning. Add bacon, ham, or spinach for extra flavor. Top with green onions for a festive touch.
