  • 2 cups cabbage, finely shredded
  • 2 cups bell peppers (green and red), diced
  • 1 cup onions, finely chopped
  • 1 cup sugar
  • 1 cup white vinegar
  • 1/2 cup apple cider vinegar
  • 1 teaspoon mustard seeds
  • 1 teaspoon celery seeds
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon red pepper flakes (adjust to your spice preference)
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine the diced green tomatoes, shredded cabbage, diced bell peppers, and finely chopped onions.
  2. In a separate saucepan, combine the sugar, white vinegar, apple cider vinegar, mustard seeds, celery seeds, ground turmeric, and red pepper flakes. Stir well.
  3. Place the saucepan over medium heat and bring the mixture to a boil. Allow it to boil for about 2-3 minutes, stirring occasionally.
  4. Pour the hot vinegar mixture over the vegetables in the mixing bowl.
  5. Stir everything together to ensure the vegetables are well coated with the vinegar mixture.
  6. Season the chow chow with salt and pepper to taste.
  7. Let the mixture cool to room temperature, then transfer it to sterilized jars with tight-fitting lids.
  8. Seal the jars and store them in the refrigerator for at least 24 hours before using. This allows the flavors to meld and develop.
  9. Chow chow can be kept in the refrigerator for several weeks, and the flavors will continue to improve with time.
