- 1 cup white vinegar
- 1/2 cup apple cider vinegar
- 1 teaspoon mustard seeds
- 1 teaspoon celery seeds
- 1 teaspoon ground turmeric
- 1/2 teaspoon red pepper flakes (adjust to your spice preference)
- Salt and pepper, to taste
Instructions
- In a large mixing bowl, combine the diced green tomatoes, shredded cabbage, diced bell peppers, and finely chopped onions.
- In a separate saucepan, combine the sugar, white vinegar, apple cider vinegar, mustard seeds, celery seeds, ground turmeric, and red pepper flakes. Stir well.
- Place the saucepan over medium heat and bring the mixture to a boil. Allow it to boil for about 2-3 minutes, stirring occasionally.
- Pour the hot vinegar mixture over the vegetables in the mixing bowl.
- Stir everything together to ensure the vegetables are well coated with the vinegar mixture.
- Season the chow chow with salt and pepper to taste.
- Let the mixture cool to room temperature, then transfer it to sterilized jars with tight-fitting lids.
- Seal the jars and store them in the refrigerator for at least 24 hours before using. This allows the flavors to meld and develop.
- Chow chow can be kept in the refrigerator for several weeks, and the flavors will continue to improve with time.
