    • 1/4 teaspoon salt
    • 1/4 cup granulated sugar (for rolling)

 

  • Chocolate Ganache Filling:
  • 1 cup semisweet chocolate chips
  • 3 tablespoons heavy cream
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a mixing bowl, cream butter and sugar together until light and fluffy.
  3. Mix in egg yolk and vanilla extract until combined.
  4. Whisk together flour and salt, then add to the wet ingredients. Mix until a soft dough forms.
  5. Roll dough into 1-inch balls, then roll each ball in granulated sugar.
  6. Place on baking sheets and press the center of each cookie with your thumb or the back of a measuring spoon.
  7. Bake for 10–12 minutes or until edges are set. If needed, press the centers again while warm.
  8. Make the ganache: Melt chocolate chips, heavy cream, and butter together in a microwave-safe bowl in 20–30 second intervals, stirring until smooth.
  9. Stir in vanilla extract, then spoon warm ganache into the indentations of each cookie.
  10. Let cookies cool until the ganache sets, then enjoy!

Notes

For a festive twist, sprinkle crushed candy canes, flaky sea salt, or holiday sprinkles on top of the warm ganache. Cookies store well in an airtight container for up to 5 days or can be frozen (without ganache) for up to 2 months.
