- 2 large eggs
- 2 tsp vanilla extract
- 1 cup hot brewed coffee or hot water

- 1 tbsp cornstarch
- 1 tbsp lemon juice

- 1 cup heavy cream
- 8 oz semi-sweet chocolate, chopped
- 1 tbsp butter (optional, for shine)

- Preheat oven: Preheat to 350°F (175°C). Grease and line two 9-inch round cake pans.
- Make cake batter: In a large bowl, whisk flour, cocoa powder, sugar, baking soda, baking powder, and salt.
- Add buttermilk, oil, eggs, and vanilla. Mix until smooth.
- Slowly stir in hot coffee until batter is thin and well combined.
- Divide batter evenly between pans and bake 30–35 minutes, until a toothpick inserted comes out clean.
- Cool cakes in pans 10 minutes, then transfer to wire racks to cool completely.
- Prepare raspberry filling: In a saucepan, combine raspberries, sugar, cornstarch, and lemon juice.
- Cook over medium heat, stirring, until thickened. Cool completely.
- Make ganache: Heat cream until just simmering. Pour over chopped chocolate and butter. Let sit 2 minutes, then stir until smooth.
- Assemble cake: Spread raspberry filling over one cake layer. Top with second layer.
- Pour ganache over the cake, allowing it to drip down the sides.
Notes
For a stronger raspberry flavor, add a thin layer of raspberry jam along with the filling. Chill the cake for 20 minutes before slicing for clean, beautiful layers.
