  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Cream Cheese Filling
  • 4 oz cream cheese, softened
  • 3 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • Homemade Strawberry Jam
  • 1 cup fresh or frozen strawberries, diced
  • 2 tbsp sugar
  • 1 tsp lemon juice

Instructions

  1. Make the Jam: In a small saucepan, cook strawberries, sugar, and lemon juice for 6–8 minutes until thickened. Cool completely.
  2. Make the Cheesecake Center: Mix softened cream cheese, powdered sugar, and vanilla until smooth. Scoop small teaspoons onto parchment and freeze for 20 minutes.
  3. Make the Dough: Cream butter and sugar until fluffy. Mix in egg and vanilla. Add flour, baking powder, and salt.
  4. Assemble: Scoop cookie dough, flatten slightly, add a frozen cheesecake ball, seal, and roll smooth.
  5. Add Jam: Spoon about 1/2 tsp of homemade jam on top of each cookie and swirl lightly.
  6. Bake: Preheat oven to 350°F (175°C). Bake 10–12 minutes until edges are set but centers soft.
  7. Cool: Allow cookies to cool on the tray for 5 minutes, then transfer to a rack.

Notes

Freeze the cream cheese balls so they bake neatly without leaking. Homemade jam can be made ahead and refrigerated for 1 week. For extra strawberry flavor, fold in 1/3 cup freeze-dried strawberry powder into the dough!
