Instructions

  1. Cream the softened butter, powdered sugar, and granulated sugar until smooth and creamy.
  2. Mix in the vanilla extract until fully incorporated.
  3. In a separate bowl, whisk together the flour and salt.
  4. Gradually add the dry ingredients to the butter mixture and mix until a soft, crumbly dough forms.
  5. Fold in the mini chocolate chips and toffee bits.
  6. Shape the dough into a log (or two smaller logs), about 2 inches thick. Wrap tightly in plastic wrap.
  7. Chill the dough for at least 1 hour, or until firm enough to slice.
  8. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  9. Slice the chilled dough into 1/4–1/2 inch thick rounds and place them on the baking sheet.
  10. Bake for 10–12 minutes, or until the edges are lightly golden.
  11. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  12. Optional: Drizzle with melted chocolate and sprinkle extra toffee bits on top.

Notes
