- 1 red bell pepper, diced
- 1–2 tbsp chili powder (adjust to taste)

- Salt and pepper, to taste

Instructions
- In a large pot, brown the meat over medium heat. Drain excess fat.
- Add onion, garlic, and bell pepper. Cook for 4–5 minutes until softened.
- Stir in chili powder, cumin, salt, and pepper. Cook 1–2 minutes to release flavors.
- Add diced tomatoes and beans. Bring to a boil, then reduce heat and simmer for 20–25 minutes.
- Serve hot with optional toppings.
