- 1 large onion, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 2 (15 oz) cans kidney beans, drained and rinsed
- 1 (15 oz) can black beans, drained and rinsed
- 2 (14.5 oz) cans diced tomatoes
- 1 (15 oz) can tomato sauce
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (optional)
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1 cup beef broth

- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add diced onion and cook 3–4 minutes until softened. Stir in garlic and cook 30 seconds.
- Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
- Stir in chili powder, cumin, smoked paprika, cayenne, salt, and pepper.
- Add diced tomatoes, tomato sauce, beans, and beef broth. Stir well.
- Bring chili to a gentle boil, then reduce heat to low.
- Simmer uncovered for 30–45 minutes, stirring occasionally, until thick and flavorful.
- Taste and adjust seasoning as needed.
Notes
Serve with classic toppings like shredded cheese, sour cream, chopped onions, jalapeños, or tortilla chips. This chili tastes even better the next day and freezes well.
