Chili Con Carne is a classic, hearty chili made with tender beef, beans, and a rich, spicy tomato base. Perfect for family dinners or casual gatherings.

- 1 lb (450g) ground beef or beef chuck, diced
- 1 onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (optional)
- Salt and black pepper, to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions
- In a large pot, brown the beef over medium-high heat. Drain excess fat if needed.
- Add onion, garlic, and bell pepper. Sauté for 3–4 minutes until softened.
- Stir in chili powder, cumin, smoked paprika, cayenne, salt, and black pepper. Cook 1 minute to release the spices’ aroma.
- Add diced tomatoes and kidney beans. Bring to a boil, then reduce heat and simmer for 25–30 minutes, stirring occasionally.
- Adjust seasoning to taste. Serve hot with optional garnishes.
Notes
For deeper flavor, simmer longer or add a splash of beer. You can also add corn or chopped jalapeños for extra texture and heat.
