Description

Ingredients

  • 1 lb (450g) ground beef or beef chuck, diced
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt and black pepper, to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. In a large pot, brown the beef over medium-high heat. Drain excess fat if needed.
  2. Add onion, garlic, and bell pepper. Sauté for 3–4 minutes until softened.
  3. Stir in chili powder, cumin, smoked paprika, cayenne, salt, and black pepper. Cook 1–2 minutes to release aromas.
  4. Add diced tomatoes and beans. Bring to a boil, then reduce heat and simmer for 25–30 minutes.
  5. Adjust seasoning as needed. Serve hot with optional toppings.

Notes

For extra depth, simmer longer or add a splash of beer. Corn or jalapeños can be added for texture and heat.
