  • 1 ripe avocado, sliced or diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Optional toppings: shredded cheese, sour cream, hot sauce

  2. Heat olive oil in a skillet over medium-high heat. Cook chicken 5–7 minutes per side until golden and cooked through (165°F / 74°C). Remove and let rest 5 minutes, then slice.
  3. In a bowl, combine avocado, cherry tomatoes, red onion, cilantro, and lime juice. Toss gently to combine.
  4. Serve chicken topped with the avocado mixture. Add optional toppings as desired.

Notes
