- 1 medium onion, diced

- 2 celery stalks, diced
- 1/3 cup all-purpose flour

- 1 cup milk or half-and-half
- 1 tsp dried thyme
- 1/2 tsp paprika
- 2 cups frozen peas
- Salt and black pepper, to taste
- Optional garnish: fresh parsley, shredded cheese

- Add chicken and cook until lightly browned on all sides.

- Gradually whisk in chicken broth and milk until smooth.
- Add thyme and paprika. Bring to a simmer and cook 15 minutes until chicken is cooked and vegetables are tender.
- Stir in peas and cook 2–3 minutes until heated through.
- Season with salt and black pepper to taste. Serve hot, garnished with parsley or cheese if desired.
Notes
For extra richness, stir in a bit of cream at the end. You can also top with puff pastry or biscuit pieces for a fun twist.
