  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1/3 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup milk or half-and-half
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 2 cups frozen peas
  • Salt and black pepper, to taste
  • Optional garnish: fresh parsley, shredded cheese

  2. Add chicken and cook until lightly browned on all sides.
  3. Sprinkle flour over the mixture and stir 1–2 minutes to cook out raw flour taste.
  4. Gradually whisk in chicken broth and milk until smooth.
  5. Add thyme and paprika. Bring to a simmer and cook 15 minutes until chicken is cooked and vegetables are tender.
  6. Stir in peas and cook 2–3 minutes until heated through.
  7. Season with salt and black pepper to taste. Serve hot, garnished with parsley or cheese if desired.

Notes

For extra richness, stir in a bit of cream at the end. You can also top with puff pastry or biscuit pieces for a fun twist.
