- 2 tbsp butter
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 3 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp dried thyme
- Salt and black pepper, to taste
- 1 package (16 oz) potato gnocchi
- 2 cups fresh spinach or kale, chopped
- Optional garnish: grated Parmesan, fresh parsley

- In a large pot, heat butter and olive oil over medium heat. Sauté onion, garlic, carrots, and celery until softened, about 4–5 minutes.
- Add chicken broth and dried thyme. Bring to a simmer.
- Stir in shredded chicken and simmer 5–10 minutes until heated through.
- Add gnocchi and cook according to package instructions until tender, usually 2–3 minutes.
- Reduce heat to low and stir in heavy cream and chopped spinach or kale. Cook 2–3 minutes until greens are wilted and soup is heated through.
- Season with salt and pepper to taste.
- Serve hot, garnished with grated Parmesan and fresh parsley if desired.
Notes
For extra flavor, sauté the vegetables in bacon or add a pinch of nutmeg to the cream. Leftovers store well in the refrigerator for 2–3 days.
