- 1 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup pumpkin puree
- 1 egg yolk
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon pumpkin pie spice
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together melted butter, brown sugar, and granulated sugar.
- Stir in pumpkin puree, egg yolk, and vanilla until smooth.
- In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice.
- Combine dry ingredients with wet ingredients and mix until a soft dough forms.
- Chill dough for 30 minutes for chewier cookies.
- Scoop dough onto baking sheet, spacing 2 inches apart.
- Bake for 10–12 minutes or until edges are set and centers are soft.
- Let cool on the pan for 5 minutes before transferring to a wire rack.
Notes
For extra chewiness, don’t overbake. Cookies will firm up as they cool. Store in an airtight container for up to 4 days.
