Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together melted butter, brown sugar, and granulated sugar.
  3. Stir in pumpkin puree, egg yolk, and vanilla until smooth.
  4. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice.
  5. Combine dry ingredients with wet ingredients and mix until a soft dough forms.
  6. Chill dough for 30 minutes for chewier cookies.
  7. Scoop dough onto baking sheet, spacing 2 inches apart.
  8. Bake for 10–12 minutes or until edges are set and centers are soft.
  9. Let cool on the pan for 5 minutes before transferring to a wire rack.

Notes

For extra chewiness, don’t overbake. Cookies will firm up as they cool. Store in an airtight container for up to 4 days.
