- 1/2 cup unsalted butter, softened
- 1 cup creamy peanut butter
- 3/4 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 egg yolk
- 2 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- Extra sugar for rolling (optional)

Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.
- Mix in the egg, extra egg yolk, and vanilla until smooth.
- Whisk together the flour, baking soda, baking powder, and salt in a separate bowl.
- Add dry ingredients to wet ingredients and mix just until a soft dough forms.
- Roll dough into 1–2 tbsp balls and, if desired, roll each in sugar.
- Gently press the tops with a fork or leave them rounded for thicker cookies.
- Bake 8–10 minutes, until edges are set but centers still look soft and puffy.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
The egg yolk helps create an ultra-chewy center while keeping the cookies soft for days. For thicker cookies, chill the dough for 20–30 minutes before baking. Add chocolate chips for the ultimate peanut butter–chocolate combo!
