- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) Rotel (tomatoes with green chilies)
- 4 cups chicken broth
- 1 block (8 oz) cream cheese, softened
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Optional toppings: sour cream, avocado, cilantro, tortilla chips
Instructions
- In a large pot, cook the ground beef with onion until browned. Drain excess fat.
- Add garlic and taco seasoning, stir to combine.
- Stir in diced tomatoes, Rotel, beans, corn, and chicken broth. Bring to a simmer.
- Reduce heat and stir in cream cheese until melted and smooth.
- Add shredded cheddar cheese and stir until creamy.
- Taste and season with salt and pepper as needed.
- Serve hot with your favorite toppings.
Notes
This soup is even better the next day as flavors deepen. For a lighter option, swap cream cheese with Greek yogurt or use reduced-fat cheese.
