- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning or 2 tbsp homemade taco spice
- 1 cup uncooked white rice
- 1 1/2 cups beef broth
- 1 cup canned diced tomatoes (drained)
- 1 cup shredded cheddar cheese
- Optional toppings: sliced jalapeños, green onions, sour cream, salsa

- In a large skillet, cook ground beef and onion over medium heat until browned. Drain excess fat.
- Add garlic and taco seasoning, cooking 1–2 minutes until fragrant.
- Stir in uncooked rice, beef broth, and diced tomatoes. Bring to a boil.
- Reduce heat to low, cover, and simmer 15 minutes until rice is tender and liquid is absorbed.
- Sprinkle shredded cheese on top and cover for 2–3 minutes until melted.
- Serve hot with optional toppings as desired.
Notes
Add black beans or corn for extra texture and nutrients. For a spicier kick, use pepper jack cheese or hot salsa.
