  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning or 2 tbsp homemade taco spice
  • 1 cup uncooked white rice
  • 1 1/2 cups beef broth
  • 1 cup canned diced tomatoes (drained)
  • 1 cup shredded cheddar cheese
  • Optional toppings: sliced jalapeños, green onions, sour cream, salsa

  2. Add garlic and taco seasoning, cooking 1–2 minutes until fragrant.
  3. Stir in uncooked rice, beef broth, and diced tomatoes. Bring to a boil.
  4. Reduce heat to low, cover, and simmer 15 minutes until rice is tender and liquid is absorbed.
  5. Sprinkle shredded cheese on top and cover for 2–3 minutes until melted.
  6. Serve hot with optional toppings as desired.

Notes

Add black beans or corn for extra texture and nutrients. For a spicier kick, use pepper jack cheese or hot salsa.
