This Cheesy Taco Rice Skillet is a one-pan, family-friendly dinner loaded with seasoned ground beef, fluffy rice, and plenty of melted cheese. It’s quick, hearty, and perfect for busy weeknights with minimal cleanup.

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup uncooked long-grain white rice
- 2 cups beef broth
- 1 can (10 oz) diced tomatoes with green chilies, undrained
- 1 cup shredded cheddar or Mexican-blend cheese
- 1 tbsp olive oil
- Salt and pepper, to taste
- Optional toppings: sour cream, green onions, cilantro

- Cook beef: Heat olive oil in a large skillet over medium heat. Add ground beef and onion and cook until browned. Drain excess grease.
- Add garlic & seasoning: Stir in garlic and taco seasoning. Cook 1 minute until fragrant.
- Add rice: Stir in uncooked rice, beef broth, and diced tomatoes with chilies.
- Simmer: Bring to a boil, then reduce heat to low. Cover and simmer 18–20 minutes until rice is tender and liquid is absorbed.
- Add cheese: Sprinkle cheese over the top, cover, and cook 2–3 minutes until melted.
- Serve: Garnish with desired toppings and serve hot.
Notes
For extra heat, add jalapeños or hot taco seasoning. Leftovers reheat well and make a great lunch the next day.
