- Vegetables:
- 2 medium potatoes, thinly sliced
- 2 medium sweet potatoes, thinly sliced
- 2 parsnips, thinly sliced
- 2 carrots, thinly sliced
- 1 small rutabaga, thinly sliced
- Cheese Sauce:
- 3 tbsp unsalted butter
- 3 tbsp all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 1 1/2 cups shredded Gruyère cheese
- 1 cup shredded sharp cheddar cheese
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp fresh thyme leaves
- Topping:
- 1/2 cup breadcrumbs (optional)
- 1/2 cup Parmesan cheese, grated
Instructions
- Preheat oven: Heat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Prepare cheese sauce: In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Slowly add milk and cream, whisking until thickened. Stir in Gruyère, cheddar, garlic powder, salt, pepper, and thyme until melted and smooth.
- Layer vegetables: Arrange a layer of mixed root vegetables in the baking dish. Pour a portion of cheese sauce over the top. Repeat layers until all vegetables and sauce are used.
- Add topping: Mix breadcrumbs and Parmesan, then sprinkle over the top (optional).
- Bake: Cover with foil and bake for 45 minutes. Remove foil and bake an additional 20–25 minutes, until vegetables are tender and the top is golden and bubbling.
- Serve: Let cool slightly before serving for the layers to set.
Notes
You can prepare this dish a day ahead and bake just before serving. For extra flavor, add caramelized onions between the vegetable layers.
