- 1 large head of cauliflower, cut into florets
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss cauliflower florets with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Spread cauliflower on the prepared baking sheet in a single layer.
- Roast for 20–25 minutes, flipping halfway, until golden and tender.
- Sprinkle cheddar and Parmesan cheeses over the cauliflower and return to the oven for 5 minutes until melted and bubbly.
- Garnish with fresh parsley and serve hot.
Notes
For extra flavor, try adding a pinch of chili flakes before roasting. You can also use mozzarella or Gruyère instead of cheddar.
