- 1 1/2 lbs baby potatoes, quartered
- 12 oz smoked sausage, sliced
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 tbsp olive oil
- Salt & pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions
- Preheat your oven to 400Β°F (200Β°C). Grease a baking dish lightly.
- In a large bowl, toss the potatoes with olive oil, ranch seasoning, salt, and pepper.
- Add the sliced smoked sausage and stir to combine.
- Spread the mixture evenly into the baking dish.
- Bake for 35β40 minutes, or until potatoes are tender.
- Remove from oven, stir in the sour cream, and sprinkle with cheddar cheese.
- Bake an additional 5β8 minutes until the cheese is melted and bubbly.
- Garnish with fresh parsley and serve warm!
