- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup uncooked white rice
- 1 3/4 cups beef broth
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 cup shredded cheddar cheese, divided
- Optional toppings: sliced pickles, chopped parsley, ketchup

- Preheat oven to 350°F (175°C).
- In a large skillet, cook ground beef and onion until browned. Drain excess fat.
- Add garlic, salt, and pepper; cook 1–2 minutes until fragrant.
- Stir in uncooked rice, beef broth, and cream of mushroom soup until well combined.
- Transfer mixture to a greased 9×13-inch baking dish.
- Sprinkle 1/2 cup of cheddar cheese on top.
- Bake uncovered for 25–30 minutes, or until rice is tender and liquid is absorbed.
- Remove from oven, sprinkle remaining cheese on top, and bake 3–5 more minutes until melted.
- Serve warm, optionally with pickles or ketchup.
Notes
You can substitute cream of chicken soup or use a combination of cheddar and mozzarella for extra cheesiness. Add frozen peas or corn for more veggies.
