- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup uncooked white rice
- 2 cups beef broth
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheddar cheese, divided
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika (optional)

- Preheat oven: Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Cook beef: In a skillet over medium heat, cook ground beef with onion until browned. Add garlic and cook 1 minute. Drain excess fat.
- Mix casserole: In a large bowl, combine cooked beef, uncooked rice, beef broth, mixed vegetables, cream of mushroom soup, salt, pepper, and 3/4 cup of cheddar cheese. Stir until well combined.
- Assemble: Pour mixture into the prepared baking dish. Top with remaining 1/4 cup cheddar cheese.
- Bake: Cover with foil and bake 35–40 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and bubbly.
- Serve: Let rest 5 minutes before serving.
Notes
Feel free to add mushrooms, bell peppers, or other favorite vegetables. Swap cheddar for Monterey Jack or mozzarella for a different cheesy flavor.
