- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 4–5 medium potatoes, thinly sliced
- 1 can (10.5 oz) cream of mushroom or cream of cheddar soup
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese, divided
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tbsp olive oil or butter

- Preheat oven: Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook beef: Heat oil in a skillet over medium heat. Cook ground beef with onion until browned. Add garlic and cook 1 minute. Drain excess fat and season with salt, pepper, and paprika.
- Make sauce: In a bowl, whisk together soup and milk until smooth.
- Assemble casserole: Layer half of the sliced potatoes in the baking dish. Top with half of the ground beef, half of the sauce, and 1/2 cup cheese. Repeat layers.
- Finish: Sprinkle remaining cheese on top.
- Bake: Cover with foil and bake 50 minutes. Uncover and bake 10–15 minutes until cheese is bubbly and potatoes are tender.
- Rest & serve: Let rest 5–10 minutes before serving.
Notes
For extra flavor, add sliced mushrooms or diced bell peppers to the beef. Yukon Gold or Russet potatoes work best for this casserole.
