  • 1 lb (450g) ground beef
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 2 tbsp olive oil

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until softened.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Add rice, beef broth, peas and carrots, salt, pepper, and paprika. Stir well.
  5. Bring to a simmer for 2–3 minutes, then transfer mixture to a greased baking dish.
  6. Top with shredded cheddar cheese.
  7. Bake uncovered for 25–30 minutes, or until rice is tender and cheese is melted and bubbly.
  8. Let cool 5 minutes before serving.

Notes

For extra flavor, sprinkle some Parmesan cheese or chopped fresh parsley on top before serving. You can also use brown rice — just increase cooking time slightly.
