- 1 lb (450g) ground beef
- 1 cup uncooked white rice
- 2 cups beef broth
- 1 cup shredded cheddar cheese (plus extra for topping)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika (optional)
- 2 tbsp olive oil

- Preheat oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Sauté onion and garlic until softened.
- Add ground beef and cook until browned. Drain excess fat.
- Add rice, beef broth, peas and carrots, salt, pepper, and paprika. Stir well.
- Bring to a simmer for 2–3 minutes, then transfer mixture to a greased baking dish.
- Top with shredded cheddar cheese.
- Bake uncovered for 25–30 minutes, or until rice is tender and cheese is melted and bubbly.
- Let cool 5 minutes before serving.
Notes
For extra flavor, sprinkle some Parmesan cheese or chopped fresh parsley on top before serving. You can also use brown rice — just increase cooking time slightly.
