- 1 large head of cauliflower, cut into florets
- 2 tbsp butter or olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup milk or cream
- 1 1/2 cups shredded cheddar cheese
- 1/2 tsp mustard powder
- Salt and black pepper, to taste
- Fresh parsley, for garnish
- Optional: croutons or extra cheese for topping
Instructions
- Heat butter or olive oil in a large pot over medium heat. Add onion and cook until soft, about 5 minutes. Stir in garlic and cook 1 more minute.
- Add cauliflower florets and broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes until cauliflower is tender.
- Blend the soup using an immersion blender (or in batches with a blender) until smooth and creamy.
- Stir in milk or cream and shredded cheddar cheese until melted and combined.
- Season with mustard powder, salt, and black pepper to taste.
- Serve hot, garnished with parsley and optional toppings like croutons or extra cheese.
Notes
For a lighter version, use low-fat milk and reduce cheese. For a richer flavor, roast the cauliflower before adding to the soup.
