Ingredients

  • 1 large head of cauliflower, cut into florets
  • 2 tbsp butter or olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk or cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 tsp mustard powder
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish
  • Optional: croutons or extra cheese for topping

Instructions

  1. Heat butter or olive oil in a large pot over medium heat. Add onion and cook until soft, about 5 minutes. Stir in garlic and cook 1 more minute.
  2. Add cauliflower florets and broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes until cauliflower is tender.
  3. Blend the soup using an immersion blender (or in batches with a blender) until smooth and creamy.
  4. Stir in milk or cream and shredded cheddar cheese until melted and combined.
  5. Season with mustard powder, salt, and black pepper to taste.
  6. Serve hot, garnished with parsley and optional toppings like croutons or extra cheese.

Notes

For a lighter version, use low-fat milk and reduce cheese. For a richer flavor, roast the cauliflower before adding to the soup.
