- 4 cups potatoes, peeled and diced
- 4 cups chicken or vegetable broth
- 1 cup whole milk
- 1 cup heavy cream
- 1 1/2 cups sharp cheddar cheese, shredded
- 1/2 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1/2 tsp dried parsley
- 1/4 tsp dried rosemary
- Chopped fresh chives or parsley, for garnish

- Sauté aromatics: In a large pot or Dutch oven, melt butter over medium heat. Add onion and cook until soft, about 4–5 minutes.
- Add garlic and cook for 30 seconds until fragrant.
- Make roux: Sprinkle flour over the mixture and stir constantly for 1 minute.
- Add liquids: Gradually whisk in broth, then add potatoes, salt, pepper, thyme, parsley, and rosemary.
- Bring to a simmer and cook 15–18 minutes, until potatoes are fork-tender.
- Creamy finish: Stir in milk and heavy cream. Simmer gently for 5 minutes.
- Remove from heat and stir in cheddar cheese until melted and smooth.
- Serve: Taste and adjust seasoning. Garnish with fresh herbs and serve warm.
Notes
For a thicker soup, lightly mash some of the potatoes before adding cheese. Add crispy bacon bits or croutons for extra texture. Soup thickens as it cools and reheats well.
