  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups russet potatoes, peeled and diced
  • 3 cups chicken or vegetable broth
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and black pepper, to taste
  • 1 1/2 cups sharp cheddar cheese, shredded
  • Optional garnish: chopped parsley, chives, extra cheese

  1. Melt butter in a large pot over medium heat. Add onion and sauté until soft, about 4–5 minutes.
  2. Add garlic and cook 30 seconds until fragrant.
  3. Stir in potatoes, broth, thyme, rosemary, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer 18–22 minutes until potatoes are fork-tender.
  5. Use an immersion blender to blend partially or fully, depending on desired texture.
  6. Stir in milk and heavy cream, heating gently.
  7. Remove from heat and stir in cheddar cheese until melted and smooth.
  8. Taste and adjust seasoning. Serve hot with desired garnishes.

Notes

For extra richness, add a splash of sour cream. You can substitute Gruyère or Monterey Jack for the cheddar if desired.
