- 1 medium onion, diced
- 4 cloves garlic, minced
- 4 cups russet potatoes, peeled and diced
- 3 cups chicken or vegetable broth
- 1 cup whole milk
- 1/2 cup heavy cream
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- Salt and black pepper, to taste
- 1 1/2 cups sharp cheddar cheese, shredded
- Optional garnish: chopped parsley, chives, extra cheese

- Melt butter in a large pot over medium heat. Add onion and sauté until soft, about 4–5 minutes.
- Add garlic and cook 30 seconds until fragrant.
- Stir in potatoes, broth, thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat and simmer 18–22 minutes until potatoes are fork-tender.
- Use an immersion blender to blend partially or fully, depending on desired texture.
- Stir in milk and heavy cream, heating gently.
- Remove from heat and stir in cheddar cheese until melted and smooth.
- Taste and adjust seasoning. Serve hot with desired garnishes.
Notes
For extra richness, add a splash of sour cream. You can substitute Gruyère or Monterey Jack for the cheddar if desired.
